To select and nurture the precious bottles in our cellar we called on Mauro Mattei, a keen, dynamic young sommelier who knows how to astonish with every glass.

The province of Rome provided the backdrop for his start in life, and an idyllic childhood spent constantly exploring tastes and smells. After unwittingly spending a long apprenticeship in food and wine amidst the walls of the family osteria, and schooling in classics and an Arts degree abandoned mid-way, he decided that wine would be the way to go. This led to his attending a course to become a sommelier, learning the trade in a number of "wine-centric" Roman restaurants, enjoying multi-faceted experiences with Gambero Rosso Holding (link), travelling, countless consultancy positions (link), star-studded restaurants (link), and wine blogging (link). All elements making up a porous personality, always open to discussion and discovery.
